Peanut Butter Banana Oats

Delicious stovetop cooked oats with creamy peanut butter and ripened bananas plus some seeds for an added nutrient boost.

I have a confession. I could eat oatmeal everyday. In fact I have eaten it for breakfast for 350 of the last 365 days. Oatmeal is truly as versatile as your imagination and potential combinations are endless. I’m not saying the Peanut Butter Banana Oats are my favorite but I will admit to eating these at least 300 of the aforementioned 350.

 

Ingredients

  • 1/2 cup oats

  • 2 cups water

  • generous pinch of salt

  • 1tsp chia seeds

  • 1tsp flax seeds

  • 1tsp hemp seeds

  • 1 Ripe banana

  • 1TBSP peanut butter

Optional

  • 1/4 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/8 tsp cardamom

  • pistachios (for added crunch)

 

Instructions

  1. In a medium saucepan, over low to medium heat, add oats, salt, chia seeds, flax seeds, hemp seeds to water.

  2. Cook until oatmeal is soft and the desired about of water has cooked off. (More water = more runny oatmeal, Less water = a firmer oatmeal) Stir occasionally to help prevent sticking.

  3. Meanwhile in the bowl you plan to eat out of mash ripe banana and stir in peanut butter. Mix until combined and smooth.

  4. Remove from heat and pour oatmeal into the mashed banana and peanut butter mixture.

  5. (Optional) Stir in Spices and garnish with pistachios.
